This is a recipe for the easiest, most flavorful pot roast I've made in the crock pot.
What I absolutely love about it is that it pretty much makes its own gravy.
It's so nice to come home from church on a Sunday afternoon and have our entire meal
piping hot and ready to serve. No waiting around for me to make the gravy.
This recipe works well whether or not you add the potatoes and carrots. And the roast beef and gravy is wonderful served over rice. Or try my homemade Cottage Cheese Bread and make yourself an amazing tender roast beef sandwich!

Crock Pot Roast Beef and Gravy
1 (4 -5 lb) beef roast, any kind
1 (1 1/4 ounce) package brown gravy mix, dry
1 (1 1/4 ounce) package dried Italian salad dressing mix
1 (1 1/4 ounce) package ranch dressing mix, dry
(or 2-3 T of this homemade Ranch mix)
1/2 cup water
1 (1 1/4 ounce) package brown gravy mix, dry

1/2 cup water
potatoes, carrots, and/or onions, if desired
Place beef roast (and potatoes, carrots, and onion, if using) in crock pot.
Combine the ranch, Italian dressing
and brown gravy packets with a 1/2 cup of water
and pour over roast in the crock pot.

Cover and cook on high for 3 1/2 - 4 hours or on low for 6-8 hours.
*some versions of this recipe call for you to combine the dry ingredients, rub onto the roast, and simply pour the water around the roast. I've not tried it that way, but it's definitely an option. I like having clean hands when I'm done pouring my mixture over the roast. It's seriously so simple.

Made this a couple weeks ago and we LOVED it. The flavor surpassed our typical family fave. I prefer pouring the mixture over as well.

Bilo had them on sale for $2.69lb a few weeks ago and occasionally will have them buy one get one free. I don't know if that beats your Costco prices? I need to keep a better eye on Ingles sales because they have great meat and usually cheaper than Publix.
