Cheddar and Herb Biscuits

If you love the biscuits they serve at Red Lobster, you will be thrilled to add this recipe to your favorites! This is the closest I've come to a copycat recipe and it's so simple and quick to throw together. A great addition to any meal. Do yourself a huge favor and serve these with this barbecue chicken
It's a crazy easy meal that your whole family will love!


Cheddar and Herb Biscuits

Ingredients:
   for biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons shortening*
3 tablespoons butter*
1 cup buttermilk 
(make your own by mixing together 1 1/2 tsp vinegar or lemon juice and 1 cup of milk and allow to sit for a few minutes)
1 1/2 - 2 cups grated sharp cheddar cheese

for buttery topping:
3 tablespoons melted butter
1/4 teaspoon dried parsley flakes
3/4 teaspoon garlic powder
pinch of salt

Directions:
Preheat oven to 425 degrees. If making your own buttermilk, go ahead and mix the vinegar and milk together and allow to sit while you prep the other ingredients.
In a medium bowl, combine flour, baking powder, garlic powder and salt. Cut in shortening and butter until coarse crumbs are formed. Lightly mix in grated cheese. Mix in buttermilk just until moist (over-mixing will result in tough biscuits). Drop the biscuits onto a greased or lined baking sheet. 
Bake for 12-14 minutes, until browned and golden. 
While the biscuits are baking, in a small bowl combine melted butter, parsley, garlic powder and salt. Brush the butter mixture over the biscuits as soon as they come out of the oven. You could also dip the top of the biscuits into the butter or drizzle it over the tops. Serve immediately. 

Notes:
I seldom have shortening on hand so I omit the shortening and increase the butter to 5 tablespoons.
They turn out great either way, so use whatever you have on hand.
